This is an easy sandwich to assemble, and you can do it all in one skillet. It can also be served on a nice biscuit, or a toasted bagel or English muffin… the choice is yours. In addition, you can always switch out the cheese to your favorite brand. The secret ingredient in this recipe is the introduction of blackberry preserves. Ingredients

  • PLAN/PURCHASE
  • 2 tablespoons sweet butter, unsalted
  • 1 - english muffin, bagel, or bread of choice
  • 2 ounces breakfast sausage, shaped into a patty
  • 1 ounce cheddar cheese, shredded
  • 1 slice provolone cheese
  • 1 large egg, lightly beaten
  • - salt, kosher variety, to taste
  • - black pepper, freshly ground, to taste
  • 1 ounce blackberry preserves

  • Step 1
    PREP/PREPARE
  • Step 2
    Gather your Ingredients (mise en place).
  • Step 3
    Spread one tablespoon of butter on your bagel, English muffin, or bread of choice, both sides.
  • Step 4
    Chef’s Note: If you need a bit more butter, that’s fine.
  • Step 5
    Place a skillet over medium heat, and add the bread.
  • Step 6
    Leave in pan, until toasted, about, 2 minutes per side, then remove, and reserve.

    Add the sausage patty to the pan, and cook until browned, about 2 – 3 minutes.

    Chef’s Tip: The size of the sausage patty should roughly be the size of your bread.

    Flip the patty, cook for about a minute. and then add the provolone cheese to the top.

    Continue to cook, until the cheese is nice and melty, about 2 – 3 minutes.

    Remove from the pan, and reserve.

    Wipe the pan out, and add the remaining tablespoon of butter.

    When the foaming subsides, add the egg, and season with some salt and pepper.

    Chef’s Tip: Here’s the best way to cook the egg. Use a spatula to push the edges of the egg to the center, and the swirl the pan, to push the uncooked egg to the edges of the pan. Then push in, swirl, push in, swirl, until the egg is set.

    Sprinkle half the egg with 75% of the cheddar cheese.
  • Step 16
    Use your spatula to fold the egg in half.
  • Step 17
    Add the remaining cheese to half the egg.
  • Step 18
    Then fold in half again.

    Add the blackberry preserves to both halves of the bread.

    Add the egg, and then the sausage patty to the bottom portion of your bread.
