  • 1/2 lb
    ground beef
  • 1 small
    chopped onion
  • 1/2 small
    green bell pepper
  • 1/2 tsp
  • 1 tsp
    ground black pepper
  • 1/2 tsp
    ground cumin
  • 2 c
    potatoes, parboiled and diced
  • 4
  • 9
    flour tortillas
  • 1/2 c
    cheddar cheese, shredded

How to Make Breakfast Burritos


  1. Brown the ground beef with the onions.
  2. Drain the fat, then add the spices and diced potatoes.
  3. Whisk the eggs and milk slightly.
  4. Add to beef/potato mixture over a medium high high.
  5. Mix together as in scrambled eggs.
  6. Warm flour tortillas on a hot griddle.
  7. Put egg/beef mixture on warmed tortilla and sprinkle with shredded cheddar cheese.
  8. Fold the tortilla making a burrito.
  9. Serve with salsa of your choice.
