Ingredients

1/2 lb
ground beef
1 small
chopped onion
1/2 small
green bell pepper
1/2 tsp
salt
1 tsp
ground black pepper
1/2 tsp
ground cumin
2 c
potatoes, parboiled and diced
4
eggs
9
flour tortillas
1/2 c
cheddar cheese, shredded
milk

How to Make Breakfast Burritos

Step-by-Step

  • 1Brown the ground beef with the onions.
  • 2Drain the fat, then add the spices and diced potatoes.
  • 3Whisk the eggs and milk slightly.
  • 4Add to beef/potato mixture over a medium high high.
  • 5Mix together as in scrambled eggs.
  • 6Warm flour tortillas on a hot griddle.
  • 7Put egg/beef mixture on warmed tortilla and sprinkle with shredded cheddar cheese.
  • 8Fold the tortilla making a burrito.
  • 9Serve with salsa of your choice.
