I think I got this recipe out of the Simple & Delicious magazine

Ingredients

  • 4 - eggs
  • 8 - 7 inch - flour tortillas
  • 1 1/2 cups cheddar cheese, shredded ( 6oz.)
  • 1 large avocado , thinly sliced
  • 1 1/2 cups chopped green onions
  • 1 pound bacon, cooked and crumbled
  • - salsa, ranch dressing or sour cream

How To Make bacon avocado burrito

  • Step 1
    In a bowl, beat the eggs. Dip tortillas in beaten eggs.
  • Step 2
    In a large skillet, cook tortilla in oil just until egg sets, turn and cook the other side. Place between paper towels to remove any oil and keep warm. Repeat with remaining tortillas adding more oil if needed.
  • Step 3
    Place cheese, avocado, onions and bacon down the center of tortillas and top with your choice of salsa, Ranch dressing or sour cream. ( We use salsa and sour cream )
  • Step 4
    Fold in ends and sides of tortilla. Serve with a fork.
