The Ultimate French Toast with Strawberries

Had some strawberries in the refrigerator and thought I'd add them to my french toast. I decided to add a sauce made with balsamic vinegar and honey instead of using syrup. Well, I'll be using this again; that's for sure. My sweetie and I along with a house guest we had over the weekend love the taste it gave the toast and berry combination.

8 slice
whole wheat bread
1/4 c
1/4 c
balsamic vinegar
1/2 lb
1/3 c
1/4 tsp
ground cinnamon
1/4 tsp
1/2 tsp
pure vanilla extract
2 Tbsp
1/2 c
sliced or slivered toasted almonds
1 c
vanilla yogurt


1Place the almonds in a non-stick pan over med-high heat and toast. Watch not to burn them.
2Remove from stove and set aside.
3Add the balsamic vinegar and honey in a sauce pan over medium heat and reduce by about half or until you see that the bubbles start to thicken.
4Slice your strawberries into a bowl and pour the reduction over them using a spatula; toss well and set aside.
5Add the eggs, salt, cinnamon, vanilla, and milk to a large bowl that is wide enough to dip the bread into.
6Whisk together so that everything is well blended.
7Dip the bread in the egg mixture on both sides so that it soaks up the batter.
8Bring your non-stick flat grill or non-stick frying pan to medium heat with a little butter just until the butter foams.
9Add the battered bread and cook on both sides until they are golden brown.
10Repeat with other bread slices.
11Top 2 slices of french toast with a few tablespoons of the strawberries along with some of the juice they gave off.
12Place a dollop of the yogurt on top and sprinkle on the toasted almonds.
13Serve hot.
