the ultimate french toast with strawberries

Had some strawberries in the refrigerator and thought I'd add them to my french toast. I decided to add a sauce made with balsamic vinegar and honey instead of using syrup. Well, I'll be using this again; that's for sure. My sweetie and I along with a house guest we had over the weekend love the taste it gave the toast and berry combination.

Ingredients

  • 8 slices whole wheat bread
  • 1/4 cup honey
  • 1/4 cup balsamic vinegar
  • 1/2 pound strawberries
  • 6 - eggs
  • 1/3 cup milk
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 teaspoon pure vanilla extract
  • 2 tablespoons butter
  • 1/2 cup sliced or slivered toasted almonds
  • 1 cup vanilla yogurt

How To Make the ultimate french toast with strawberries

  • Step 1
    Place the almonds in a non-stick pan over med-high heat and toast. Watch not to burn them.
  • Step 2
    Remove from stove and set aside.
  • Step 3
    Add the balsamic vinegar and honey in a sauce pan over medium heat and reduce by about half or until you see that the bubbles start to thicken.
  • Step 4
    Slice your strawberries into a bowl and pour the reduction over them using a spatula; toss well and set aside.
  • Step 5
    Add the eggs, salt, cinnamon, vanilla, and milk to a large bowl that is wide enough to dip the bread into.
  • Step 6
    Whisk together so that everything is well blended.
  • Step 7
    Dip the bread in the egg mixture on both sides so that it soaks up the batter.
  • Step 8
    Bring your non-stick flat grill or non-stick frying pan to medium heat with a little butter just until the butter foams.
  • Step 9
    Add the battered bread and cook on both sides until they are golden brown.
  • Step 10
    Repeat with other bread slices.
  • Step 11
    Top 2 slices of french toast with a few tablespoons of the strawberries along with some of the juice they gave off.
  • Step 12
    Place a dollop of the yogurt on top and sprinkle on the toasted almonds.
  • Step 13
    Serve hot.
