I wanted to make something special for my boyfriend on the day of a job interview. He loves strawberries so I decided to make some pancakes utilizing them. He loved them!

Ingredients

  • 1 cup bisquick
  • 1 - egg
  • 1/2 cup milk
  • 4 large fresh strawberries, leaves cut off and strawberry coarsely chopped
  • - butter
  • - whipped cream (optional)
  • 2 large fresh strawberries, sliced

How To Make strawberry pancakes

  • Step 1
    In a large mixing bowl, combine Bisquick, eggs, milk, and strawberries. Using a wire whisk, beat until batter is somewhat smooth but has a few lumps from the strawberries.
  • Step 2
    On a heated griddle or non-stick skillet, spray non-stick cooking spray. Pour just under 1/3 cup of the batter into the skillet. If using a large skillet, you should be able to get about 2 pancakes per batch. Don’t overcrowd the skillet.
  • Step 3
    Cook until edges are dry and batter starts to bubble a little in the middle. Carefully turn the pancake over using a spatula. Once you have flipped the pancake, take a basting brush and dip into butter. Carefully spread the butter over the pancakes while they are in the skillet.
  • Step 4
    Serve with whipped topping and sliced strawberries.
