Strawberry Bruschetta (Homemade Style)

This is one of those things that has an wonderful taste without a lot of effort. It would be a great treat for your weekend breakfast:) Or even a great dessert.

4 slice
whole wheat bread (thick style)
6 Tbsp
light brown sugar
1 tsp
grated lemon zest
2 tsp
lemon juice
3 c
strawberries (sliced or diced)
4 Tbsp
mascarpone cheese (or lowfat cream cheese)


1Toast bread in toaster.
2In skillet over high heat, add sugar, lemon zest and lemon juice and cook; stirring constantly, until sugar melts and the mixture begins to bubble (about 30 seconds to a minute). Add strawberries and stir until juice begins to ooze and the strawberries are heated through (about 30 seconds to a minute more). You don't want to over cook the strawberries, you are just trying to heat them enough to get the juices flowing:)
3Spread a tablespoon of mascarpone (or cream cheese)cheese on top of each slice and top with warm berries.
