Strawberry Bruschetta (Homemade Style)
4 slicewhole wheat bread (thick style)
6 Tbsplight brown sugar
1 tspgrated lemon zest
2 tsplemon juice
3 cstrawberries (sliced or diced)
4 Tbspmascarpone cheese (or lowfat cream cheese)
How to Make Strawberry Bruschetta (Homemade Style)
- Toast bread in toaster.
- In skillet over high heat, add sugar, lemon zest and lemon juice and cook; stirring constantly, until sugar melts and the mixture begins to bubble (about 30 seconds to a minute). Add strawberries and stir until juice begins to ooze and the strawberries are heated through (about 30 seconds to a minute more). You don't want to over cook the strawberries, you are just trying to heat them enough to get the juices flowing:)
- Spread a tablespoon of mascarpone (or cream cheese)cheese on top of each slice and top with warm berries.
