strawberry beignets with homemade whipped cream

These aren't your standard square beignets. They do not use yeast. They remind me of strawberry funnel cakes but more rounded. They are really good right out of the fryer sprinkled with powder sugar and dipped in whipped cream!

Ingredients

  • STRAWBERRY BEIGNETS
  • 1 cup diced strawberries
  • 1 1/4 cups flour
  • 3/4 cup sugar
  • 3 - eggs
  • 1 teaspoon baking powder
  • 1 tablespoon butter, melted
  • 1/8 teaspoon salt
  • 1/4 cup milk
  • 4 teaspoons vanilla
  • 1/8 teaspoon cinnamon
  • - oil for frying
  • WHIPPED CREAM
  • 1 cup heavy whipping cream
  • 2 tablespoons sugar
  • 1 teaspoon vanilla or french vanilla extract

How To Make strawberry beignets with homemade whipped cream

  • Step 1
    In a fryer or deep skillet, heat the oil to 375 degrees.
  • Step 2
    In a medium bowl mix together the diced strawberries,sugar,eggs,melted butter,milk,cinnamon and vanilla.
  • Step 3
    In a separate large bowl, combine the flour, baking powder, and salt. Mix well until well blended.
  • Step 4
    Slowly pour the strawberry mixture into the dry ingredients while mixing with a wire whisk. Blend until ingredients are incorporated. Do NOT over mix!
  • Step 5
    Using a small cookie scoop, scoop up the fritter batter and place in oil. They will fluff up as they fry. They will be in many different shapes. Flip often until golden. About 3-5 minutes. Remove and drain on a paper towel lined plate.
  • Step 6
    TIP: these are great served with Smuckers strawberry syrup and then dipped in the whipped cream!
  • Step 7
    TO MAKE WHIPPED CREAM: Pour Heavy whipping cream into a mixer with 1 tsp of vanilla and 2 tablespoons of sugar. Mix well with the wire attachment (beaters) until stiff peaks form!
