Since having a Pina Colada for breakfast is frowned upon, I threw together this delicious variation with some tangy Orange Syrup to go with it. If I had any pineapple in the house I would have made Pineapple Syrup instead! Family quite enjoyed it!

Ingredients

  • 6 slice
    your choice of bread
  • 2 large
    eggs
  • 1/2 c
    pina colada drink mix
  • ORANGE SYRUP

  • 1/2 c
    sugar
  • 1/2 c
    water
  • 2 Tbsp
    orange marmalade (heaping spoonfuls)
  • 2 Tbsp
    frozen orange juice concentrate, undiluted (heaping spoonfuls)

How to Make Pina Colada French Toast & Orange Syrup

Step-by-Step

  1. Heat skillet, spray with nonstick or melt butter. In a bowl, whisk eggs and pina colada mix together; dip bread slices in mixture and place on grill. Remove to plate when golden brown on both sides.
  2. In a small saucepan, heat sugar and water to boiling, stirring until dissolved. Stir in marmalade and juice. Continue to boil for 1-2 minutes then remove from heat. place in serving container.
  3. Serve toast with banana slices, orange syrup, and shredded coconut if desired.
