This is actually my Husband's recipe. He is know in our house for Saturday morning breakfast :) This is my favorite breakfast. He started making these for me on our kid free weekends. They are AWESOME. You can use whatever yogurt you like, and whatever fruit you like. He serves this with some turkey sausage, YUM. I can not tell you how wonderful these are. This will be a treat for anyone. Even our kids like them.

Ingredients For japanese pancakes

  • 1/2 stick
    butter
  • 1/2 c
    all purpose flour
  • 1/2 c
    milk, 2%
  • 1 lg
    egg
  • 4 oz
    yogurt, plain or fruit flavored
  • 3 c
    chopped fresh fruit
  • powdered sugar

How To Make japanese pancakes

    Preheat oven to 425 degrees. Melt 1/2 stick of butter in metal pie pan or round cake pan in the oven. (Butter melts quicker and more evenly if cut into tablespoon size pieces)

    Mix flour, milk and egg in small bowl. Pour in baking pan after butter has completly melted; place in oven. Cook for 12-14 minutes. It will puff up and be golden brown.

    Transfer pankcake to plate. Coat lightly with yogurt. Cover with fruit (works bettter if you chop your fruit into smaller pieces); then sprinkle with powdered sugar on top.
