Ingredients

  • STREUSEL TOPPING:
  • 1/2 cup sugar
  • 1/2 cup flour
  • 1/3 cup quick oats
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/3 cup butter
  • BATTER:
  • 1 1/2 cups flour
  • 2 cups frozen blueberries don't thaw
  • 1 cup oatmeal
  • 2 tablespoons lemon juice
  • 2 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup butter
  • 1/2 cup sugar
  • 1 medium egg
  • 2/3 cup milk

How To Make blueberry buckle coffee cake

  • Step 1
    Prepare topping: In medium bowl combine sugar, flour, oatmeal cinnamon, nutmeg, cut in butter until crumbly, set aside.
  • Step 2
    Prepare batter: Heat oven to 350. Grease an 11x7 inch baking dish. In med bowl combine flour, oatmeal, baking powder and salt, set aside
  • Step 3
    Large bowl beat butter, sugar, blend in egg. Add flour mixture alternately wtih milk, mixing until blended. Spread in pan, toss berries with lemon juice, sprinkle w batter and topping. Bake 55-60 mins.
