This is wonderful as a breakfast or lunch or anytime. You can also use a round cake pan if you dont have an iron skillet.This makes one pancake.

Ingredients
- 1/4 cup butter
- 4 - eggs
- 1 cup milk
- 1 cup all purpose flour
- 2 cups fresh fruit
How To Make baked pancake and fruit

Step 1In 425 degree oven melt butter in cast iron skillet or round baking pan.

Step 2In bowl combine eggs, milk and flour and beat until foamy.

Step 3Pour into hot skillet and bake at 425 degrees for 17-22 minutes till golden.

Step 4Top with fresh fruit. I have used strawberries,kiwi,blckberries,grapes,and a peach all together. Can sift powdered sugar on top.
