A real comfort food For those cool fall mornings or a late night snack when you want to relax and unwind. May be made the day before and reheated.

Ingredients

  • 3 medium apples, granny smith or a mixture of sweet and tart) cored, peeled and chopped
  • 2 cups apple cider
  • 1 cup water
  • 1 teaspoon lemon peel
  • 1/8 cup sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 teaspoon vanilla extract

How To Make apple soup

  • Step 1
    place all ingredients into large sauce pan and cook until apples are mushy, about 40-45 minutes
  • Step 2
    remove from heat and puree in blender at low speed until smooth
  • Step 3
    Serve hot with a swirl of whipped cream or vanilla yogurt.
