Ingredients
- 3 medium apples, granny smith or a mixture of sweet and tart) cored, peeled and chopped
- 2 cups apple cider
- 1 cup water
- 1 teaspoon lemon peel
- 1/8 cup sugar
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1 teaspoon vanilla extract
How To Make apple soup

Step 1place all ingredients into large sauce pan and cook until apples are mushy, about 40-45 minutes

Step 2remove from heat and puree in blender at low speed until smooth

Step 3Serve hot with a swirl of whipped cream or vanilla yogurt.
