Makes 1 dozen muffins.


  • 2 c
    all-purpose flour
  • 1/4 c
  • 2 1/2 tsp
    baking powder
  • 1 tsp
    ground cinnamon
  • 1/4 tsp
  • 1/2 c
    walnuts chopped
  • 1 c
  • 2
  • 1/4 c
    vegetable oil
  • 1 small
    tart green apple, peeled and chopped
  • 1/4 c
    golden raisins

How to Make Apple Raisin Muffins


  1. Heat oven to 400F.
  2. Grease and flour a 12-cup muffin tin or line with paper liners.
  3. Combine flour, sugar, baking powder, cinnamon, salt and walnuts in a medium bowl; make a well in the center.
  4. In another bowl, mix milk, eggs, oil, apple and raisins in small bowl.
  5. Pour mixture into well. Mix batter until just moistened; do not over mix.
  6. Fill prepared muffin tins 3/4 full.
  7. Bake for 18-20 minutes or until muffins test done. Cool in pan on wire rack.
