Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 2 1/2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup walnuts chopped
  • 1 cup milk
  • 2 - eggs
  • 1/4 cup vegetable oil
  • 1 small tart green apple, peeled and chopped
  • 1/4 cup golden raisins

How To Make apple raisin muffins

  • Step 1
    Heat oven to 400F.
  • Step 2
    Grease and flour a 12-cup muffin tin or line with paper liners.
  • Step 3
    Combine flour, sugar, baking powder, cinnamon, salt and walnuts in a medium bowl; make a well in the center.
  • Step 4
    In another bowl, mix milk, eggs, oil, apple and raisins in small bowl.
  • Step 5
    Pour mixture into well. Mix batter until just moistened; do not over mix.
  • Step 6
    Fill prepared muffin tins 3/4 full.
  • Step 7
    Bake for 18-20 minutes or until muffins test done. Cool in pan on wire rack.
