Ingredients
- 2 small corn tortillas
- 1 teaspoon olive oil, extra-virgin
- 2 teaspoons onion, chopped
- 2 tablespoons tomato, chopped
- 2 tablespoons black beans
- 4 x large egg whites, beaten
- 1/4 medium avocado, diced
- pepper, to taste
How To Make zumba breakfast tacos

Step 1Preheat olive oil in a saute pan over medium low heat. Saute onions until softened, about 2 - 3 minutes. Add tomatoes & black beans to pan & saute another 2 minutes. Add egg whites to the pan & stir continuously until cooked through. Season eggs with pepper. Spoon 1/2 of the eggs into each tortilla & top with avocado.
