Ingredients

  • 4 eggs
  • 3 tablespoons mushrooms, chopped
  • 2 tablespoons green pepper, or any color, chopped
  • 1 tablespoon onion, chopped
  • 2 tablespoons shredded cheese, any variety
  • pan spray
  • salt, pepper, seasoned salt, to taste
  • 2 tablespoons salsa, to serve
  • fresh parsley, as garnish

How To Make veggie omelet

  • Step 1
    Spray skillet. When hot, add veggies. Saute until onion starts to soften.
  • Step 2
    Beat eggs lightly and add to sautéed veggies. Season with salt and pepper or seasoning of your choice.
  • Step 3
    Push eggs from edges as they set - in other words, make an omelet! OR just scramble eggs and veggies together.
  • Step 4
    When almost set, sprinkle with shredded cheese. Turn off heat, cover pan until cheese melts.
  • Step 5
    plate the eggs either as 1/2 omelet or per person or 1/2 of the scrambled eggs. Top with salsa and parsley.
