Ingredients
- 4 eggs
- 3 tablespoons mushrooms, chopped
- 2 tablespoons green pepper, or any color, chopped
- 1 tablespoon onion, chopped
- 2 tablespoons shredded cheese, any variety
- pan spray
- salt, pepper, seasoned salt, to taste
- 2 tablespoons salsa, to serve
- fresh parsley, as garnish
How To Make veggie omelet

Step 1Spray skillet. When hot, add veggies. Saute until onion starts to soften.

Step 2Beat eggs lightly and add to sautéed veggies. Season with salt and pepper or seasoning of your choice.

Step 3Push eggs from edges as they set - in other words, make an omelet! OR just scramble eggs and veggies together.

Step 4When almost set, sprinkle with shredded cheese. Turn off heat, cover pan until cheese melts.

Step 5plate the eggs either as 1/2 omelet or per person or 1/2 of the scrambled eggs. Top with salsa and parsley.
