I just adopted this recipe, and I will be making some changes, I think I will omit the cream of tartar... I will also add cooked sausage and onion! We will see what else I change at the time I cook this. Sounds delicious just the way it is but I will be making it my own! ;)

Ingredients For vegetable omelet

  • 3
    eggs whisked together
  • 1/4 tsp
    cream of tartar
  • 1 Tbsp
    mushrooms, sliced
  • 2
    green onions, chopped
  • 2 Tbsp
    tomatoes, chopped
  • 1/4 c
    monterey jack cheese, shredded
  • cooking spray
  • salt and pepper to taste

How To Make vegetable omelet

  • 1
    Whisk eggs together with cream of tartar and pour into hot skillet coated with cooking spray.

    As egg starts to cook place vegetables on one side of the egg.

    When egg is cooked fold 1/2 the egg over the vegetables.

    Salt and pepper to taste.
