Ingredients For tuscan egg bake

  • 12
    eggs
  • 12 oz
    cottage cheese, small curd
  • 1 lb
    cooked pork or chicken sausage, crumbled
  • 1 c
    sun-dried tomatoes, julienne cut - not in oil
  • 1 c
    chopped spinach

How To Make tuscan egg bake

    Cook sausage and drain grease. Crumble.

    Beat eggs and cottage cheese in a large bowl until well blended and smooth.

    Pour eggs into a 9x13 baking dish.

    Add sausage on top of eggs. Do not mix in.
  • 5
    Add spinach on top of the sausage. Do not mix in.

    Add tomatoes on top of spinach. Don't mix in, but push all of the toppings down into the eggs. The eggs should not cover the toppings.

    Bake at 350 degrees for 30 minutes. Cover with foil to keep it from getting too brown. Cook another 15 minutes or until set. Let set for a few minutes before cutting.
