tomatoes & eggs on toast
This is a recipe that has been passed down in my family forever! Its a fabulous way to start the morning and is really wonderful as brunch too! Enjoy!

Ingredients
- 1-2 can canned tomatoes (any)
- 1-6 - eggs
- 1 pinch salt and pepper
- 2 slices favorite toast
- 2 slices cheese (any i prefer provalone)
How To Make tomatoes & eggs on toast

Step 1Pour 1-2 cans of your favorite canned tomatoes in a cooking pot and heat to a boil on med-high. Add salt & pepper and any additional seasonings.

Step 2Crack 1-6 in a separate bowl (no eggshells in this dish) pour one at a time in pot, being sure to space them out. Spoon tomatoes over each egg. Poached until desired readiness. Poached over easy, etc...

Step 3At same time brown and butter your toast.

Step 4When eggs are done, spoon eggs over your toast making sure to get a desired amount of tomatoes and sauce too. Top with cheese and Enjoy!
