sweet potato hash
This is a twist on regular hash-browns for breakfast. You can choose a different breakfast meat, if you like.

Ingredients
- 1 tablespoon olive oil
- 1 medium sweet potato
- salt and pepper, to taste
- 2 eggs
- 4 ounces slice of ham
- butter, for pan
- sriracha, to taste
- parsley, for garnish
How To Make sweet potato hash

Step 1Peel and shred the sweet potato.

Step 2Heat a cast iron (or other) pan over medium heat and swirl in the olive oil. Add shredded potatoes in a single layer, season with salt and pepper. Flip occasionally and cook until potato are browned. Cover and keep warm.

Step 3Heat a frying pan over medium heat, add some butter. Lower heat and add eggs. Cover and let eggs cook until whites are set - a couple minutes.

Step 4While eggs set, cook ham slice in another pan until warmed. Flip so both sides will get somewhat crispy.

Step 5To serve - plate sweet potatoes, top with eggs. Serve ham on the side and sprinkle with parsley and sriracha, if desired.
