I loved poached eggs and this is a unique take on a traditional breakfast/brunch dish.

Ingredients

  • 1 cup butter, melted
  • 1 - 12-oz. can spam
  • 4 - egg yolks
  • 4 - english muffins, split and toasted
  • 1/2 cup fresh baby spinach
  • 8 large eggs
  • 3 1/2 tablespoons lemon juice
  • 8 slices tomato
  • 1 tablespoon water
  • 1 teaspoon white vinegar

How To Make surprise eggs benedict

  • Step 1
    Fill bottom of a double boiler with water - make sure it doesn't touch the top pan. Bring the water to a simmer.
  • Step 2
    In top pan, whisk together egg yolks, lemon juice and 1 tbsp. water. Add butter to egg yolk mixture and add 1-2 tsp. hot water. Whisk until the butter is incorporated. Whisk in salt and removed from heat. Cover the pan to keep warm.
  • Step 3
    Poach eggs by filling a large saucepan with 3 inches of water. Bring the water to a gentle simmer and add vinegar. Carefully break eggs into a cup and slide into water gently one at a time. Cook 2 1/2 - 3 minutes or until whites are cooked and yolks are still soft in the center. Remove with a slotted spoon and place on a warm plate.
  • Step 4
    Cut span into 4 (1/4 inch thick) slices. In a medium skillet, heat spam over medium high heat until lightly crisp.
  • Step 5
    Place English muffins, cut side up, on serving plates. Top evenly with spinach - then spam, tomato slices - followed by poached egg. Drizzle with hollandaise sauce. Garnish with chives, if desired. Serve immediately.
