stuffing cups with anyway eggs
Hi all! I always make extra sides with our Thanksgiving Day meal to be sure there's plenty of leftovers for family and guests to take home and to have for the next day of course.This is something I came up with,spur of the moment and it seems to be a big hit! Hope you enjoy it as much as we do!

Ingredients
- 6 cups left over stuffing
- 1 stick butter
- 6 large eggs
- 1/4 teaspoon salt and pepper
How To Make stuffing cups with anyway eggs

Step 1I make these in individual portions using small ramekins or baking cups. Fill each cup 3/4 of the way to the top,place in microwave for 5-8 minutes to heat. meanwhile in pot of boiling salted water,poach the eggs,( out of the shells) or if you have a poaching tray that's even better.The eggs can be prepared any way you like,soft boiled,over easy,scrambled etc.What ever's your liking! That's why they're " anyway eggs"!

Step 2When the stuffing is heated,place a pat of butter on each cup,then one egg for each,sprinkle with salt and pepper and serve! Note: I like mine with a tablespoon of the leftover gravy on top!

Step 3Hint: I have also place the stuffing cups under the broiler foe a few minutes to crisp the tops a little before putting on the egg. Yummy!
