spaghetti eggs!

I am disabled, and I babysit my grandchildren. I only had 4 eggs to feed 6 people.. and had no one around to go to the store for me.... So I decided to make up a recipe that the kids would like using left overs in the refrigerator. It came out very good, and the children ask me to make them "Spaghetti Eggs" from time to time. When there is company over, we make a big batch and there are never any left overs! I hope you try this and enjoy it and PLAY WITH YOUR FOOD!

Ingredients

  • 2 tablespoons butter
  • 1 medium onion (diced)
  • 1/3 cup each: red & green bell pepper (diced)
  • 2 cups plain,left over, spaghetti noodles (cut up a little )
  • 4 large eggs (beaten very well)
  • 1/4 cup water (beaten in with eggs)
  • 1/2 teaspoon each: salt, pepper, garlic powder
  • 1/2 cup any kind of cheese (shredded or sliced) (optional)
  • 1/2 cup ham, spam, bacon or sausage (cooked and cut up) (optional)

How To Make spaghetti eggs!

  • This version has ham in it.
    Step 1
    In large non stick skillet: Melt the butter and coat the pan, add onions and bell peppers. When cooked...but not browned, add the spaghetti noodles. Stir together and heat through.
  • Step 2
    Beat together very well the eggs, water and spices. Pour over the spaghetti and veggies. Scramble gently together until eggs are done.
  • Step 3
    *** Serve with sausage, toast & jam. *** You can omit ingredients or add ingredients as you desire.
