southwest scrambled eggs with jalapeno jelly
I got this recipe in my MasterCook software, by Jo Merrill. Although we enjoyed these eggs, they are a little on the sweet side. We will make them again when we want something a little different.

Ingredients
- 1/2 - onion
- 3 tablespoons butter
- 6 - eggs
- 2 tablespoons jalapeno jelly
- 3 ounces cream cheese
How To Make southwest scrambled eggs with jalapeno jelly

Step 1Fit the steel knife blade into the work bowl of the food processor. Process onion until chopped in 1/4-inch pieces.

Step 2Melt butter in a medium skillet. Saute onion in skillet until tender.

Step 3With steel knife blade still attached, process eggs, jelly and cream cheese until smooth, about 30 seconds. Pour mixture into skillet with onions and scramble until eggs are dry.

Step 4Note: I just chop the onions and use a blender to mix everything. Beats cleaning up the processor, imho. lol.
