smoked salmon omelets with red onions and capers
I love smoked salmon, cream cheese, red onions and capers on a bagel. This uses the same ingredients in an omelet.

Ingredients
- 12 large eggs
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 2 teaspoons butter
- 6 ounces smoked salmon, chopped
- 4 tablespoons red onion, chopped
- 4 teaspoons capers, drained
- 8 ounces cream cheese, whipped
How To Make smoked salmon omelets with red onions and capers

Step 1Whisk eggs, salt and pepper in a large bowl to blend.

Step 2Melt 2 teaspoons butter in a 8-inch diameter nonstick skillet over medium heat.

Step 3Ladle 3/4 cup of the egg mixture into the skillet.

Step 4Cook until eggs are softly set, stirring often and lifting edge of eggs to allow uncooked portion to run under, covering skillet if necessary to help set the top.

Step 5Place 1/4 of the salmon on half of the omelet.

Step 6Sprinkle with 1 tablespoon onion and 1 teaspoon capers.

Step 7Top with 2 tablespoons cream cheese.

Step 8Fold omelet in half and slid out onto plate.

Step 9Repeat with ingredients to make 3 more omelets.
