My fiance made this for me as our first breakfast together. The dry cured bacon in this dish is absolutly fabulous.

Ingredients
- 6 - eggs
- 1 1/2 cups bacon dry cured
- 2 tablespoons sour cream
- 1/4 cup cheese smoked cheddar
- 1/4 cup cheese havarti
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
- 1/4 cup scallions fine sliced
- 2 tablespoons bacon fat/ butter/ vegetable oil
How To Make smoked cheddar and havarti bacon omlete

Step 1chop bacon into small pieces, slice scallions , shred cheese than set aside

Step 2cook bacon pieces. than drain and reserve bacon fat.

Step 3crack eggs into mixing bowl add sourcream. whip until smooth. Than add salt and pepper just before cooking

Step 4add 2 TB bacon fat to frying pan, heat on medium. Add egg mix allow to cook.

Step 5after 2 mins turn down heat to medium low

Step 6once omlete is almost done cooking add remaning ingredients (cheese, bacon bits, scallions) fold egg mixture and finish cooking
