Scrambled Eggs with Feta & Mushrooms

1 Tbspmilk or water
3mushrooms, sliced thin
1 1/2 Tbspcilantro, chopped
1 1/2 Tbspcrumbled feta cheese
1 Tbspbutter, or smart start
·salt and pepper to taste
How to Make Scrambled Eggs with Feta & Mushrooms
- Heat skillet medium heat. Add butter to skillet, heat till bubbly then add mushrooms and saute. While mushrooms are cooking, add eggs and milk/water to bowl (add salt & pepper to taste) and whip. Add eggs to mushrooms, frequently stirring, when almost done add Feta cheese. Cook lightly till cheese melts, being careful not to overcook the eggs.
- Add eggs to plate and top with chopped cilantro.
- Serve with small bowl of mixed fruit, or melon slices.
