Ingredients

  • 3 x large eggs
  • 1 pinch kosher salt
  • 1 pinch black pepper
  • 3 - 4 tablespoons heavy cream
  • 1 tablespoon butter, unsalted
  • 1 - 2 slices velveeta cheese (optional)

How To Make scrambled egg secrets

  • Step 1
    Whisk the eggs, salt, pepper, cream together until light & foamy.
  • Step 2
    Add butter to a nonstick skillet & place over high heat. When butter bubbles (1 minute), pour eggs in center of pan (that'll force butter to the edges - where it's needed).
  • Step 3
    Stir slowly with spatula. When curds form, drop the heat to low & shift from stirring to foldiing the curds over on themselves while gently shaking the pan with your other hand. HINT: Get the eggs out of the pan before they're done - they will finish cooking on your plate.
  • Step 4
    When no more liquidous eggs is running around pan, turn heat off & gently transfer to a warmed plate. Let eggs rest 1 minute before serving. If using cheese, place over eggs now - quickly.
