- 4 - eggs
- 1/4 cup sour cream
- 1/4 teaspoon salt
- 1/4 teaspoon tabasco
- 1 dash pepper
- 1 1/2 tablespoons butter
- 1/4 cup shredded swiss cheese
- 1/4 can grated parmesan cheese
- 1/2 teaspoon oregano leaves, crumbled
- 3 - green onions, finely sliced
- 4 - cherry tomatoes, halved
- 3 slices salami, cut in strips
- 2 - anchovies, optional

Step 1Beat together eggs, sour cream, salt, hot pepper seasoning, and pepper until blended. Melt butter in small frying pan over medium-low heat. When butter begins to foam, add eggs. Cook, uncovered, lifting cooked portion with a wide spatula to allow uncooked egg to flow under. When eggs are just softly set, remove from heat.

Step 2Sprinkle cheeses evenly over eggs; then sprinkle oregano evenly over cheese. Broil about 4 inches from heat just until cheese is melted. Distribute onion over eggs; arrange cherry tomatoes, salami, and anchovies (if used) on top of onion. Cut in wedges.
