Ingredients

  • 1/2 pound bulk pork sausage or bacon
  • 12 large eggs
  • 1/2 - small onion ..diced small or minced dry onion
  • 1/4 cup green bell pepper..diced small
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon pepper
  • 1/2 cup shredded cheddar cheese

How To Make scrambled egg muffins

  • Step 1
    Preheat oven to 350.
  • Step 2
    In a large skillet,cook sausage until no longer pink. Drain. (you could substitute bacon for sausage.Use same instructions)
  • Step 3
    In a large bowl,beat eggs. Add onion & next 5 ingredients. Stir in sausage and cheese.
  • Step 4
    Spoon by 1/3 cupfuls into muffin cups coated with cooking spray.
  • Step 5
    Bake 20-25 minutes or until a knife inserted comes out clean.
