My boyfriend loves it when I use left over ribeye for his omlet..He makes sure to leave a little ribeye each time we have it.

Ingredients

  • small left over rare ribeye
  • - diced tomatoes
  • - 1/8 onion diced tiny
  • - 1/8 bell pepper or anahiem chili pepper diced tiny
  • - 4 large eggs
  • - 1/8 cup milk
  • small can mushrooms
  • - colby jack cheese finley shedded
  • - non stick vegtable spray

How To Make ribeye omlet

  • Step 1
    Spray non stick skillet with vegtable spray and warm
  • Step 2
    chop onions and peppers very tiny
  • Step 3
    mix milk and eggs and whip with whisk till belended well
  • Step 4
    dice tomates and ribeye in cubes (Small)
  • Step 5
    Pour egg mixture into warm skillet, add ribeye,tomatoes, onions, drained mushrooms to one side of omlet salt and pepper lightly
  • Step 6
    Put heat on low and cover omlet. let cook until almost dry uncover and sprinkle cheese across side of omlet with meat. Using a spatula fold omlet over and cover one additional minute. Remove cover and cut in half.
  • Step 7
    Use what you like sometimes I put fresh baby spinich in omlet as well. Enjoy.
