A quick and easy crustless quiche with a balanced blend of ingredients complimented by delicate fluffy eggs and surrounded by pieces of bacon with a swiss cheese base.
This versatile dish can be served for breakfast, brunch, lunch or dinner!
Serve with fresh muffins or toasted bread and fruit.

Ingredients

  • 6 slice
    bacon
  • 4 oz
    swiss cheese, shredded
  • 2 Tbsp
    butter, melted
  • 4
    eggs, beaten
  • 1/4 c
    onion, finely chopped
  • 1 tsp
    salt
  • 1/2 c
    all-purpose flour
  • 1 1/2 c
    milk

How to Make Quick Crustless Quiche

Step-by-Step

  1. In a skillet fry bacon over medium heat until evenly browned. Drain, crumble and sit aside.
    (I use my kitchen shears to cut bacon into small pieces before frying to save having to crumble later).
  2. Preheat oven to 350º and lightly grease a 9-inch pie pan.
    Line bottom of pie pan with cheese, then top with the crumbled bacon.
  3. Combine eggs, melted butter, onion, salt, flour and milk. Whisk or blend until smooth. (I prefer to use an immersion blender or upright blender)
  4. Pour into pie pan, covering cheese and bacon.
    (place on a cookie sheet for easier handling in and out of the oven)
    Bake about 50 minutes until top is lightly golden and knife inserted into center comes out clean.(center will be soft).
    Let stand 10 minutes before cutting.
