This is the easiest recipe but everyone says "wow" when they see it. And they're even more impressed when they taste it! It's certainly one of my favorites. Individually serves four of your favorite breakfast or brunchgoers and is easily multiplied. My mother-in-law taught me this one, and she is a 5-star chef in Barbados!

Who knew something so simple could be so delicious? These baked eggs are simple to make. Since they are served in individual ramekins, they are impressive when served. The eggs are cooked in a thick cream for richness. As you dig in, gooey fresh mozzarella cheese is a nice surprise. Then you get to the smoky pieces of bacon. An easy and delicious treat for a holiday breakfast or brunch.

Ingredients
- butter
- 4 slices bacon, cooked and cut in pieces
- 4 slices fresh mozzarella, cut in pieces
- 4 large eggs
- 1 cup heavy cream
- - salt, to taste
- pepper, to taste
- paprika, to taste (optional)
How To Make puddin place eggs

Step 1Preheat oven to 375 degrees F. Lightly butter the ramekins.

Step 2Put bacon in a circle around the edges and add mozzarella on top of bacon.

Step 3Gently add egg to the center without breaking the yolks.

Step 4Gently spoon about 1/4 c cream over each egg.

Step 5Salt and pepper lightly. Sprinkle with paprika.

Step 6Bake in the oven for about 20-25 minutes.

Step 7Center should "shake" but not "swim."
