Ingredients
- 1-2 tablespoon olive oil
- 4 eggs
- 1/2 pound Linguica (or other smoked sausage)
- 1/2 medium onion, chopped
- 1/2 medium red pepper, chopped
- 1/4 cup shredded cheese (optional)
- fresh parsley, chopped
- salt and pepper, to taste
How To Make portuguese linguica omelette

Step 1Chop onion, pepper, and linguica into dice.

Step 2Heat olive oil in a skillet. Then saute onion, red pepper, and linguica until onion is somewhat translucent. Set aside.

Step 3Add a little more oil to the pan. Prepare the omelette.

Step 4When almost set, add saved onion mixture and fold over. Sprinkle with parsley. Season with salt and pepper.

Step 5Note: shredded cheese of your choice can be added if you like before you fold over the omelette.
