Linguica is a sausage used in Portuguese and Brazilian dishes. Usinger's Sausage in Milwaukee had some for sale today.

Ingredients

  • 1-2 tablespoon olive oil
  • 4 eggs
  • 1/2 pound Linguica (or other smoked sausage)
  • 1/2 medium onion, chopped
  • 1/2 medium red pepper, chopped
  • 1/4 cup shredded cheese (optional)
  • fresh parsley, chopped
  • salt and pepper, to taste

How To Make portuguese linguica omelette

  • Step 1
    Chop onion, pepper, and linguica into dice.
  • Step 2
    Heat olive oil in a skillet. Then saute onion, red pepper, and linguica until onion is somewhat translucent. Set aside.
  • Step 3
    Add a little more oil to the pan. Prepare the omelette.
  • Step 4
    When almost set, add saved onion mixture and fold over. Sprinkle with parsley. Season with salt and pepper.
  • Step 5
    Note: shredded cheese of your choice can be added if you like before you fold over the omelette.
