Some mornings just need something easy, quick, and nourishing. These eggs fit the bill, especially if your clan loves grab and go breakfast sandwiches! Put them on toast, English muffins, bagels, or biscuits. Just cut the eggs to fit the bread. Fully-cooked sausage patties would be another easy and quick addition, as would precooked bacon. Sauté veggies to stir into the egg mixture before baking. This photo shows an egg square on one of my Lazy Day Biscuits, which I cut into squares. I keep the extras in a freezer bag just for breakfast sandwiches. =^..^=

Ingredients For oven baked scrambled eggs for breakfast sandwiches

  • butter or cooking spray
  • 6
    eggs
  • 1/4 c
    water, cream, or milk
  • 1/2 heapin tsp
    dry mustard, optional
  • salt and pepper, optional
  • 1/2 c
    shredded cheddar cheese, optional
  • 4 to 6
    small bagels, English muffins, or biscuits, optional

How To Make oven baked scrambled eggs for breakfast sandwiches

  • Melted butter

    Preheat the oven to 350 degrees F. Prepare an 8x8 inch baking dish (or pie plate) by melting 2 Tablespoons of butter in it in the preheating oven OR mist the baking dish with cooking spray.
  • Mixing up the eggs

    In a medium bowl, whisk together the eggs, liquid, salt and pepper, dry mustard, and half the shredded cheese.
  • Stir the eggs after baking 7 minutes.

    Pour the egg mixture into the prepared baking dish and bake for 7 minutes. Quickly stir the eggs, then even them out again.
  • Add more cheese

    Sprinkle with the rest of the cheese on top and return the baking dish to the oven.
  • Oven cooked eggs.

    Bake another 5 or so minutes until the eggs are cooked through and the cheese is melted to your liking. Allow to set for two minutes if the eggs will be sliced into squares for sandwiches. If not, serve eggs immediately.
  • Make an eggs sandwich

    If you’re making breakfast sandwiches, slice and serve up on the bread of your choice. This amount of eggs will make 4-6 sandwiches, depending on the size of the bread you choose. Enjoy! =^..^=
