open faced cheesy egg sandwich

Came up with this recipe because I had a little bit of this and that and remembered a sandwich I loved from a restaurant at Fairlane Town Plaza

Ingredients

  • 2 - eggs cooked how ever you like
  • 2 slices bacon, ham, sausage
  • 1 - english muffins
  • 2 - tomato slices
  • 1 teaspoon butter, melted
  • 1 teaspoon flour
  • 1/2 cup milk or cream
  • 1/2 cup cheddar cheese or what you have on hand

How To Make open faced cheesy egg sandwich

  • Step 1
    make basic white sauce; melt butter add flour and stir till smooth, add milk stir add cheese stir til smooth and thick. This amount will be enough for 2-3 sandwiches
  • Step 2
    cook bacon, ham or sausage and set aside. I used leftovers of bacon.
  • Step 3
    cook eggs anyway you want. While eggs are cooking split english muffin and toast. Butter muffins on each muffin add 1 slice of tomato,1 egg, 1/2 cheese sauce and top with bacon.
  • Step 4
    I serve open face. If using ham or sausage, place meat ontop of egg then add cheese sauce. This recipe is great to customize to any leftovers you have
