Ingredients
- 1 cup water
- 1/2 clove milk, skim
- 1/4 teaspoon salt
- 1/3 cup quick cooking grits
- 1/4 cup cheddar cheese, shredded
- 2 teaspoons olive oil, extra virgin
- 2 tablespoons onion flakes, dehydrated
- 1 - tomato, diced
- 3 x large eggs
- 3 x large egg whites
- 6 tablespoons heavy cream
- 1/2 teaspoon thyme, dried
- 1/8 teaspoon pepper
How To Make onion & tomato egg scramble on grits squares

Step 1Spray a 8" square baking dish with cooking spray. In a medium saucepan, add water, milk, 1/8 tsp salt; bring to boil over medium high heat. Slowly add in grits. Reduce heat to low & cook; stirring constantly until grits are thick & smooth, about 5 minutes. Remove from heat & sitr in 1/2 of the cheese. Spread grits mixture evenly into prepared pan; let cool 10 minutes. Cut grits into 8 squares.

Step 2Heat 1 tsp oil in large skillet over medium heat. Add grits squares & cook until lightly browned, 4 - 5 minutes per side.

Step 3Heat remaining 1 tsp oil in 2nd large skillet over medium heat. Add onion & cook; stirring occasionally until softened, about 5 minutes. Add tomatoe & cook another 3 minutes.

Step 4Whisk eggs, egg whites, heavy cream, thyme, pepper & remaining salt in medium bowl. Add egg mixture to skillet & scrable until set but still moist, about 3 - 4 minutes. Serve egg scramble on top of grits squares. Sprinkle with remaining cheese.
