This recipe came from Ma's recipe box (found in NC July 2019). I remember going to NOLA with her when I was younger, and not particularly liking the rich Hollandaise sauce. This recipe is a much easier version!

Ingredients
- 5 eggs
- 1 ounce diced ham
- 1/2 ounce bread croutons
- 1/2 fresh lemon
- liquid clear butter
How To Make omelette benedict, ma

Step 1Prepare Hollandaise sauce 1st: Beat 2 egg yolks and pour slowly liquid butter in until it becomes a little bit thick. Add salt and squeeze lemon.

Step 2Then Omelette: Beat 3 eggs and add salt. Then pour into hot pan with a little butter, and stir 2 seconds. Then put ham and bread croutons onto eggs and finish off as usual omelette. Put omelette on plate and cover with sauce. Finish under broiler.
