Ingredients
- 1 tablespoon olive oil
- 2 large eggs
- 1 tablespoon creme fraiche
- salt and pepper
- 1 tablespoon diced red onion
- 2 tablespoons chopped tomato
- 1 tablespoon delallo pepper drops, chopped
- 3 tablespoons shredded Manchego cheese, divided
- chives, for garnish
How To Make omelet with manchego cheese and pepper drops

Step 1Whip the eggs with the creme fraiche. Season with salt and pepper.

Step 2Add oil to a skillet and pour the eggs into the skillet. Swirl the eggs around, pushing cooked egg to the middle, and continue to cook until the top is almost done.

Step 3Top with the onions, tomato, pepper drops, and 2 Tbsp cheese. Cook 1 minute.

Step 4Fold the omelet in half. Place on a plate and sprinkle with the remaining cheese and chives.
