Ingredients

  • 1 tablespoon olive oil
  • 2 large eggs
  • 1 tablespoon creme fraiche
  • salt and pepper
  • 1 tablespoon diced red onion
  • 2 tablespoons chopped tomato
  • 1 tablespoon delallo pepper drops, chopped
  • 3 tablespoons shredded Manchego cheese, divided
  • chives, for garnish

How To Make omelet with manchego cheese and pepper drops

  • Step 1
    Whip the eggs with the creme fraiche. Season with salt and pepper.
  • Step 2
    Add oil to a skillet and pour the eggs into the skillet. Swirl the eggs around, pushing cooked egg to the middle, and continue to cook until the top is almost done.
  • Step 3
    Top with the onions, tomato, pepper drops, and 2 Tbsp cheese. Cook 1 minute.
  • Step 4
    Fold the omelet in half. Place on a plate and sprinkle with the remaining cheese and chives.
