Translated means "Eggs of Love". This is a dish for 2 but I made it for weekend guests....makes a nice breakfast, brunch or a quick supper. This recipe comes from a little cookbook I bought on Salt Spring Island a few years ago.... Different and delicious!!

Ingredients
- 4 - eggs
- 2 tablespoons butter
- 4 tablespoons tomato sauce
- 2 tablespoons finely choped onion
- 1 clove garlic minced
- 8 - mushrooms sliced
- 4 dashes tabasco sauce
- 2 teaspoons worcestershire sauce
- 1/4 cup grated cheese
- - parmesan cheese
- - parsley
- - chives, dried
- - s/p
How To Make oeufs d'amour

Step 1Preheat oven to 350 degrees. Butter 2 individual small oven proof dishes.I used my creme brulee dishes. Spread the bottom of each dish with the tomato sauce. Melt butter in a frying pan and saute garlic, mushrooms and onion.Add tabasco, worcestershire, salt,pepper and olive oil if needed. Cook until browned.Break 2 eggs into each dish and arrange the mushroom mixture around the eggs. Top with cheddar, parsley, chives,and s/p. Bake for about 12 mins till eggs are done to your liking. Serve with toasted french bread.
