Ingredients
- 1/4 cup olive oil
- 1 pound mushrooms, cleaned and sliced
- salt and pepper
- 2 cloves garlic
- 2 tablespoons dry vermouth
- 4 large eggs
- fresh parsley, for garnish
How To Make mushrooms smothered in egg yolks

Step 1Add the oil to a saute pan. Add the mushrooms and season with salt and pepper. Cook until the mushrooms give up their moisture. Add the garlic and vermouth. Let cook until all liquid evaporates. Place on a plate.

Step 2Add a little more oil to the pan and fry the eggs, turning once, making sure the yolks are runny. Trim away the white of the egg yolks and place the yolks on the mushrooms. Season with salt.

Step 3Break the yolks over the mushrooms for a fantastic sauce.
