mexican huevos rancheros ___bebita's way!
I just cooked this for breakfast this Sunday morning!! This recipe calls for beans but did not used them today also calls for cheese and as you see I didnt put any on my plate....Enjoy!

Ingredients
- 6 - eggs
- 6 - corn tortillas
- 1 medium white onion sliced
- 1 can tomatoe sauce 15oz
- 2 medium jalapeno peppers diced(ommit if you don't like heat)
- 1 small green pepper diced
- 3 - roma tomatoes diced
- 1 teaspoon oregano and cumin each
- 1 - bay leaf
- 1 - clove garlic (minced)
- 1 - can of refried beans
- 1 cup monterey jack cheese
- 2 tablespoons oil
- - salt and pepper to taste
- FOR FRYING TORTILLAS USE AS MUCH OIL YOU NEED TO FRY THEM
- WARM REFRIED BEANS IN MICROWAVE STIRRING OCCACIONALLY TO WARM THRUE!

Step 1Put oil in pan. Saute onions. Add tomato sauce, garlic, chiles, cumin, oregano and bay leaf. Simmer 10 minutes. Add salt and pepper. Remove bay leaf. Carefully break the eggs in this pan and let eggs cook(poach)

Step 2Heat the oil in a large skillet over medium-high heat. Place a tortilla in the oil. Turn with tongs occasionally until the tortilla is lightly brown all over.

Step 3Place on paper towels to soak oil add a pinch of salt on fried tortillas (both sides)

Step 4Place 2 tortillas on a plate, coat the tortillas with a thin layer of warm refried beans. Sprinkle both plates with cheese. Top each tortilla with an egg and ladle on warmed salsa.
