matzo brei
Matzo Brei is a traditional dish served for breakfast during Passover, though we like it year round! It may sound odd to put sweet things over the "scrambled" eggs, but I think you'll be amazed at how good this is! This is a savory matzo brei, but you can make it sweet, too, by adding a bit of sugar (not too much!) to the eggs before cooking. By the way, brei rhymes with try.

Ingredients
- 4 sheets matzo
- 4 eggs
- salt and pepper, to taste
- 2 tablespoons butter
- OPTIONAL GARNISHES
- sour cream
- applesauce
- honey
- raspberry jam
How To Make matzo brei

Step 1Into a medium bowl, break each sheet of matzo into small pieces (roughly 2 inch squares).

Step 2Pour boiling water over the matzo, to cover. Let sit for about a minute, then drain. Squeeze as much water as you can from the matzo without turning it into mush. The pieces should still hold together.

Step 3Break the eggs into a bowl, add salt and pepper to taste and whisk until well combined. Add the drained matzo and mix well (but gently!)

Step 4Melt the butter in a skillet over medium heat. When sizzling, add the matzo mixture and cook until lightly browned, stirring occasionally to break up into large curds. This takes about 3-4 minutes.

Step 5Transfer the brei to serving plates and serve with the topping of your choice. We prefer sour cream and applesauce on ours. Some of our family prefer honey, and some prefer raspberry (or other) preserves.
