1 Tbspbutter (divided)

1/4 cleftover mashed potatoes (no instant)

1 Tbspshredded cheddar cheese (plus extra for garnish)

1 tspreal bacon bits (plus extra for garnish)

1 tspchives (plus extra for garnish)

How To Make loaded breakfast potato pancake

1Gather and prep ingredients.

2In small skillet (preferrably nonstick,) melt 1/2 tablespoon butter over medium-low heat.

3While butter is melting, mix together the mashed potatoes, cheese, bacon bits and chives; form into a tight patty.

4Fry in the melted butter, over medium heat, for approximately 2 minutes or until edges are well browned.

5Gently shake the skillet to loosen patty; use a spatula to flip patty; fry for approximately 2 minutes or until edges are well browned.

6Slide patty onto serving plate; set aside.

7Use a paper towel to wipe brown bits from skillet.

8Place skillet back on stove; add and melt remaining 1/2 tablespoon butter over medium-low heat.

9Crack egg into melted butter; fry over medium heat until white of egg is almost totally cooked (about 2 minutes;) use spatula to flip egg. Shut off heat. Allow egg to remain in skillet for about 1 minute for "over easy."

10Slide fried egg onto fried potato patty.

11Garnish with additional cheese, bacon bits and chives. Serve immediately.
