There are several variations of this recipe and when making these, they are so versatile. I came up with a version that is low in carbs, calories and fat. The fun thing is you can play around with the ingredients and make a few different kinds per pan. That way you have a wide variety to choose from each morning. Make 12 or 18 at a time and you have breakfast ready to grab, pop in the microwave to heat up and go. It doesn't get any easier than that! Recipe is a variation of my own. Photos are my own.

Ingredients

  • 12 medium eggs
  • 6 - jimmy dean heat 'n serve
  • - 55% less fat turkey sausage patties
  • 6 - low fat colby jack or cheddar sticks
  • - splash of skim milk per egg cup
  • - fresh spinach
  • - fresh basil
  • - fresh chives
  • - garlic and onion powder
  • - black pepper

How To Make lc/lf turkey sausage cheesy egg muffins-annette's

  • Step 1
    Preheat oven to 350°. Spray a 12 cup muffin pan well with Pam.
  • Step 2
    *NOTE*I do this next step one at a time so I know that I'm getting the correct amount of turkey/cheese per muffin cup.
  • Step 3
    In a glass measuring cup or small bowl, crack one egg at a time. Beat to break up yolk with a fork and add just a splash of skim milk. Add pepper, garlic and onion powder and mix well.
  • Step 4
    Cut one thawed sausage patty in half and chop into pieces. Cut one cheese stick in half and cut into pieces as well. Add both into egg mixture.
  • Step 5
    Chop spinach, basil and chives. Add to egg/meat/cheese mixture. Mix to combine all ingredients.
  • Step 6
    Pour into greased muffin tin. Repeat 11 more times. Bake in preheated 350° oven for 20-25 minutes or until eggs are set. Mine are always done at 25 minutes.
  • Step 7
    Remove from oven and serve or let cool and then store in an air tight container in the refrigerator until ready to serve. Reheat in microwave on medium-medium high heat for about 2 minutes. Microwave oven times and temps may vary. Enjoy!
