There are several variations of this recipe and when making these, they are so versatile. I came up with a version that is low in carbs, calories and fat. The fun thing is you can play around with the ingredients and make a few different kinds per pan. That way you have a wide variety to choose from each morning. Make 12 or 18 at a time and you have breakfast ready to grab, pop in the microwave to heat up and go. It doesn't get any easier than that!

jimmy dean heat 'n serve
55% less fat turkey sausage patties
low fat colby jack or cheddar sticks
splash of skim milk per egg cup
fresh spinach
fresh basil
fresh chives
garlic and onion powder
black pepper

How to Make LC/LF Turkey Sausage Cheesy Egg Muffins-Annette's


  • 1Preheat oven to 350°. Spray a 12 cup muffin pan well with Pam.
  • 2*NOTE*I do this next step one at a time so I know that I'm getting the correct amount of turkey/cheese per muffin cup.
  • 3In a glass measuring cup or small bowl, crack one egg at a time. Beat to break up yolk with a fork and add just a splash of skim milk. Add pepper, garlic and onion powder and mix well.
  • 4Cut one thawed sausage patty in half and chop into pieces. Cut one cheese stick in half and cut into pieces as well. Add both into egg mixture.
  • 5Chop spinach, basil and chives. Add to egg/meat/cheese mixture. Mix to combine all ingredients.
  • 6Pour into greased muffin tin. Repeat 11 more times. Bake in preheated 350° oven for 20-25 minutes or until eggs are set. Mine are always done at 25 minutes.
  • 7Remove from oven and serve or let cool and then store in an air tight container in the refrigerator until ready to serve. Reheat in microwave on medium-medium high heat for about 2 minutes. Microwave oven times and temps may vary. Enjoy!
