Ingredients
- 2 avocados
- 4 eggs
- kosher salt & pepper, to taste
- 1/2 cup grated cheese, your choice
- 1 tablespoon fresh cilantro, minced
How To Make key west avocado & egg bake

Step 1Preheat the oven to 400F. Line a baking sheet with parchment. Cut the avocados in half and remove the pits.

Step 2Leave the peel on the avocados, and cut a very small small slice off the bottom of each half, so that the avocados don't roll on the baking sheet. Place them on the baking sheet.

Step 3Crack an egg into the cavity of each avocado half. Season with kosher salt and pepper to taste. Sprinkle shredded cheese over the top of each.

Step 4Bake for 10-15 minutes, until the eggs are done to your liking. Remove from oven, sprinkle the minced cilantro on top, and serve with toast points. Optional: drizzle with a bit of aioli or hot sauce of your choice.
