~ if you please, smoked sausage scramble ~

I love throwing breakfasts together that turn out so good! I used up some veggies that needed to go and got rid of some smoked sausage I stocked up on when on sale. This scramble was loaded with flavor and my family loved it! Enjoy!

Ingredients For ~ if you please, smoked sausage scramble ~

  • 6
    eggs, lightly beaten with 1 tablespoon milk
  • 1 Tbsp
    olive oil
  • 8 oz
    thinly sliced smoked sausage
  • 1/2 c
    red, yellow and green bell pepper, chopped
  • 1 tsp
    garlic paste or 1 large clove, minced
  • 1 md
    peeled and chopped tomato
  • 3 - 4
    green onion, sliced
  • 1/2 c
    chopped sweet onion
  • 1/8 - 1/4 tsp
    cayenne pepper or to taste
  • 1/4 - 1/3 c
    water
  • 1/4 tsp
    black pepper
  • garnish
    with green onion and a sprinkle of creole seasoning

How To Make ~ if you please, smoked sausage scramble ~

    In a large skillet, over medium heat, add oil. To this add onion, garlic and sausage. Saute until sausage is browned.

    To this add tomato, cayenne, peppers, black pepper and water. Simmer until water is mostly gone, but peppers aren't mushy. A little water left won't hurt before adding eggs.

    Lower the heat and add the eggs. Stirring occasionally until cooked but not dry.

    Serve immediately. I garnished with green onion and a sprinkle of Creole seasoning.
