These are so easy and so good. These are also gluten free and feeds a crowd. My kids even ate the spinach. Sort of a clever take on green eggs and ham.

Ingredients

  • 12 large
    eggs
  • 12 slice
    ham, smoked and deli-sliced
  • 1 box
    10 oz frozen spinach, thawed and strained
  • 2 c
    shredded cheese
  • 2 pinch
    salt and pepper

How to Make Ham, Egg & Cheese Cups Recipe

Step-by-Step

  1. Preheat oven to 350
  2. Spray muffin tin with cooking spray
  3. Press a slice of ham into each muffin cup
  4. Evenly distribute spinach between muffins cups
  5. Evenly distribute cheese between muffin cups
  6. Crack 1 egg to each muffin cup
  7. Season with salt and pepper
  8. Bake for 25 min or until done
