My Gram would fry some onions and bacon, add scrambled eggs, and call it "a St. Paul". When I was a kid I loved this aromatic breakfast. Add coffee and toast for a complete old-fashioned breakfast. Why did she call it a St. Paul? Your guess is as good as mine.

Ingredients For gram's st. paul breakfast

  • 4 slice
    low sodium bacon
  • 1/2
    yellow or sweet onion
  • 4
    whole large eggs
  • 1/4 c
    low fat cheddar cheese (optional)

How To Make gram's st. paul breakfast

    Chop bacon and onions into similarly sized pieces (Dice). Fry in a cast iron skillet until onions are soft and bacon is slightly crisp on the edges.

    Crack each egg into a bowl individually to avoid a "bad" egg. Scramble with a little black pepper and cheese (if using). Add to the pan with onions and bacon (do not drain the grease). Cook until eggs are set. Serve hot with toast and coffee!
