I was never a fan of the crust on a quiche so I started using potatoes.

Ingredients

  • 2 cups shredded potatoes (frozen hashbrowns are ok)
  • 3 tablespoons oil, divided
  • 5 large eggs
  • 1 cup greek yogurt
  • 5 slices cooked bacon
  • 1 cup grated cheese (i mix cheddar and mozzarella)
  • 1 cup chopped veggie (zucchini, broccoli, spinach, etc)
  • salt and pepper

How To Make gluten free quiche

  • Step 1
    Preheat oven to 350, grease a pie pan
  • Step 2
    Place 2 T oil in a skillet and cook the potatoes. Add salt and pepper. Remove to the pie pan and pat to cover bottom and sides. If you want less oil, instead of frying, put the potatoes in the pie pan, spritz with spray oil, and bake until you get a little color.
  • Step 3
    With remaining 1 T (or less, depends on the vegetable used) of oil saute your vegetable of choice.
  • Step 4
    Mix the eggs and yogurt with a whisk until well mixed.
  • Step 5
    Add the rest of the ingredients and mix.
  • Step 6
    Pour over the crust and bake at 350 for 40-45 minutes.
