frittata 101
Simply put, a frittata is just a crustless quiche. You add eggs, precooked meat, whatever veggies you have on hand (or need to use up), cheese (if you like), and in a few minutes, you have a yummy breakfast or a beautiful brunch item. This frittata size will hold about a cup of veggies and precooked meat in total, more or less, and a cup of shredded cheese. This recipe will give you the basics. Ingredients
- BASE
- 6 eggs
- 1/4 cup milk or cream
- 1 teaspoon ground mustard, optional
- 1/2 teaspoon salt, optional
- 1/2 teaspoon pepper, optional
- shredded or grated cheese, optional
- OPTIONS
- 1 tablespoon butter or olive oil
- chopped veggies, optional
- precooked crumbled or chopped meat, optional
- CHEESE IDEAS
- cheddar cheese, American, colby jack, pepper jack, feta, mozzarella
- VEGGIE IDEAS
- potato cubes, precooked or thawed, onions, bell peppers, tomatoes, mushrooms, olives, jalepenos
- PRECOOKED MEAT IDEAS
- bacon, sausage, ground beef, scrapple, corned beef, leftover dinner meat
How To Make frittata 101

Step 1Preheat the oven to 375 degrees F and choose an oven safe skillet. (Either a nonstick or well-seasoned cast iron skillet works best.) Put the skillet on the stove over medium heat.

Step 2In a medium bowl or measuring cup, add the eggs, milk, ground mustard, salt and pepper. Whisk until blended. Stir in some or all of your cheese now. Set aside.

Step 3In the skillet, melt the butter or add the oil and sauté any veggies that need softened, like precooked or thawed potato cubes, chopped onion, chopped peppers, etc. When these harder veggies are softened, add any veggies that simply need heated, like tomatoes, and any cooked meats. Stir occasionally until all veggies and meats are heated through.

Step 4Spread out the skillet ingredients evenly. Carefully pour the egg/cheese mixture over everything and allow to “set” over the heat for about 30 seconds.

Step 5Place the filled skillet in the oven and bake about 8 minutes. Add any additional cheese for the top and bake an additional 2-5 minutes, until the frittata is set and the cheese is melted. The frittata will puff up nicely when done, then it will deflate as it cools. That’s just the nature of frittatas.

Step 6Slide the frittata out of the skillet onto a cutting board or platter. Slice and serve immediately. Enjoy! =^..^= Refrigerate leftovers, of course.
